Install new extractor fan for oven

Need new extractor fan installed over oven. Will need outside venting, ie making a hole for pipe it to exit. Suspect piping needs to be bought separately, as it is a standard box set for extractor. Our kitchen is in the highest part of our house, we are on stilts, so access for making the vent-hole will either be up in the roof, or scaling the heights outside (I think Health and Safety would mean it needs scaffold). Need advice please!
