removing old telecom wall plugs/boxes

In an 90's two storey townhouse we have a number of telecom wall plugs that you would plug a phone into. We have ADSL internet so need to keep the one the router is plugged into downstairs live but none of the rest are needed. All of the wires come together in the roof and are in the way of the flooring I am putting down in the attic. What I need done is to cut off the unrequired boxes and ensure the remaining wiring is clear (either underneath or to the side) of the new flooring. Access is straight forward via recently installed folding roof stairs.
