Kitchen bench- sand & seal

I had a bamboo kitchen bench installed 2 years ago. I foolishly chose not to have it polyuraned & instead oiled it. The bench now has marks on it & some mould ? Where water has sat. It needs sanding & coating with a high grade marine seal.
