Stone benchtop Cabinet removal

Hi, We would like to transform our benchtop island as our dining table. The island has a legroom of 25 cm in front and we want to achieve about 30 cm on the other side. To attain this, cabinets should be removed and replaced it with a panel. However, I am open to any suggestions. Please see photos attached.
