Garage Framing for gibing

I have a large barn that I want to be framed out inside so we can line the walls with gib or board whatever is suitable. I would prefer one company to do the framing, gibbing and plastering the walls ready for paint, however if that is not possible ill hire specialists in each area of expertise to do each stage. I have attached the plans and it is important to note that where the big roller doors are located we want to frame inside these doors so glass sliding doors can go in and the roller doors can still close over the top for security. I would also like to keep as much of the ceiling height as possible. The barn shed is located in Omaio.
