Large pine tree (+some root) removal for boundary fence

We've got a large mature pine tree on our boundary line at the back of our section. The tree is on a slope, and has grown out of the bank at an angle. There are houses below us (down the bank) - so we're keen on removing the tree for safety reasons, but also to be able to put a boundary fence up. We'd like the tree removed down to a stump, and we'd also like selective roots removed - effectively we're wanting enough room to put in posts for a fence. We're not sure what is suitable around ground stability when removing tree roots, so we'd be after guidance from you on this. Access to the rear of our section isn't the greatest - through a path down the side of our house, and down a steep (at times) dirt bank to the tree - but we might be able to use the access from our neighbour's side which is a lot more open (to be confirmed with the neighbour). We'd ideally like all of the tree to be taken away after it's felled. Alternatively, if it could be cut into smaller sections and left on site, and then we can split it up into firewood, we'd be happy to discuss that. As far as timing of the job goes - mid-late July would be great, but we're not on a specific timeline so we're willing to discuss when is best. Thanks.
