Olive Tree Height Reduction and Pruning

Trim the top of 11 Olive trees to reduce the height by approx 1.5m and prune sides. Want to prune so they fill in foliage lower down to block the view of the neighbours if possible, as the foliage is now too high. They are currently approx. 4-5m high. Thanks.
